Dairy Free Strawberry Cheesecake

Enjoy a light and guilt-free, delicious cake with our plant-based, dairy-free Strawberry Cheesecake Recipe.

INGREDIENTS:

Crust:

150 gm cashew nuts

120 gm almond

100 gm soft dates

Filling:

300 gm cashew nut soaked in water

10 ml lemon juice

10 ml vanilla extract

50 gm kishmish paste

100 gm date paste

200 gm cooked strawberry topping

5 gm isabgol(psyllium husk)

Topping:

400 gm fresh strawberries sliced

100 gm water

50 gm kishmish paste

50 gm date paste

METHOD:

Crust:

Blitz the nuts in a mixer till medium coarse. Mix date paste and form a mixture. Press the mixture into the pie mould to form a thin layer and refrigerate.

Filling:

Blend all the ingredients into a smooth paste. Pour into the crust mould and refrigerate for a minimum of 2 hours.

Topping:

Cook the strawberry with other ingredients for 15 minutes till it is a bright red colour thick syrup. Set aside till it cools down and serve it as topping for the cheesecake.
