Easy, delicious and loaded with nutrition - this winter cozy up with our wholesome Spiced Carrot Soup.
1 chopped onion
750 gm unpeeled & diced carrots
1 tsp unpeeled & grated ginger
2 tsp crushed coriander seeds
4 cups vegetable stock
salt & pepper to taste
Steam carrots till tender.
Saute the onions
Add carrots, ginger & coriander seeds.
Add stock and bring to boil.
Puree the soup in a blender.
Reheat and season with salt & pepper.
Serve with a spoonful of coconut cream.
Garnish with coriander.
